Pollo con Mole

(serves 4)

Ingredients
  • 1 kg cut-up skinless chicken or 4 chicken breasts
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 pack ready-to-serve Red Mole Sauce (350 g)
  • 50 g toasted sesame seeds
  • Salt and pepper to taste
  • Corn Tortillas
Preparation
  1. Put chicken in large pot and cover with water.
  2. Add garlic, salt and pepper.
  3. Boil until chicken is done, about 45 minutes. Remove chicken.
  4. To a large sauce pan add the Mole Sauce.
  5. Bring the sauce up to a boil and reduce to a simmer.
  6. Mix chicken pieces in sauce and cook for 2 minutes.
  7. Remove from the heat and keep warm until ready to serve.
  8. Serve with rice and corn tortillas and garnish with sesame seeds.

Mole sauce should be fairly thick.
